Patrick Rousseau is born in family of restaurant owners since the 50’s in the North of France. He learnt his way in the restaurant business in his parents’ place and then became a waiter in at the « Crémaillère », place du Tertre in Montmartre in 1979. One year later he worked at the upscale brasserie « Chez Francis », place de l’Alma. Always wanting to learn more about the restaurant business, Patrick became sommelier when the wine bar «le Beverly » opened.
Patrick opened his own restaurant on the coast of Spain in 1986. Following this first success Patrick decided to come back to Paris and create the first Rouge VIF restaurant in Montparnasse in 1990. The idea behind the Rouge VIF restaurant is to propose classics from French cuisine in a friendly atmosphere to all customers. In 1995 the Rouge VIF is moving to one of the most beautiful area of Paris, the VIIth arrondissement, rue de Verneuil. There he has the incredible chance to have among regular customers politicians, celebrities, influencial people from the media, and wealthy tourists. His most loyal customers received their own napkin ring or “rond de serviette” with their name engraved on it. This honour became the trademark of the Rouge VIF in Paris.
